TURKEY POCKETS

Ingredients

  • 1 package of puff pastry sheets (thawed)
  • 1/2 pound deli turkey, thinly sliced
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup spinach or lettuce leaves
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup mayonnaise or mustard (or a combination of both)
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Puff Pastry: Lay out the puff pastry sheets on a lightly floured surface. Cut each sheet into four equal squares.
  3. Add Fillings: On one half of each square, place a few slices of deli turkey, a sprinkle of cheese, some spinach or lettuce leaves, and diced tomatoes if using. Season with a bit of salt and pepper.
  4. Add Spread: Spread a thin layer of mayonnaise or mustard over the filling.
  5. Fold and Seal Pockets: Fold the other half of the pastry over the filling to create a pocket. Use a fork to press and seal the edges.
  6. Egg Wash: In a small bowl, beat the egg. Brush the egg wash over the top of each pocket. This gives them a nice golden color when baked.
  7. Bake: Place the pockets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the pockets are puffed and golden brown.
  8. Cool and Serve: Let the turkey pockets cool for a few minutes before serving. They can be eaten warm or at room temperature.
