Ingredients: For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3 eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

For the topping:

  • 2 cups sliced fresh strawberries
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice

Instructions:

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well.
  3. Press the mixture into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes and then remove it from the oven and set it aside to cool.
  4. In a separate mixing bowl, beat the cream cheese until smooth.
  5. Add the granulated sugar and all-purpose flour to the cream cheese mixture and beat until well combined.
  6. Beat in the eggs, one at a time, until fully incorporated.
  7. Add the sour cream, heavy cream, and vanilla extract to the cheesecake mixture and beat until smooth.
  8. Pour the cheesecake mixture over the cooled graham cracker crust.
  9. Bake the cheesecake for 45-50 minutes or until the center of the cheesecake is almost set.
  10. Remove the cheesecake from the oven and allow it to cool to room temperature before transferring it to the refrigerator to chill for at least 4 hours or overnight.
  11. In a mixing bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss well to combine.
