Southern Chocolate Cobbler

Ingredients:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped pecans
  • 1 1/2 cups boiling water

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, salt, 1/2 cup of the granulated sugar, and the cocoa powder.
  3. In a separate bowl, mix together the milk, melted butter, and vanilla extract. Stir the wet ingredients into the dry ingredients until just combined. Fold in the chocolate chips and chopped pecans.
  4. Spread the batter evenly in the bottom of an 8-inch square baking dish.
  5. In a small bowl, mix together the remaining 1/4 cup granulated sugar and the boiling water. Pour the mixture over the top of the batter, being careful not to disturb the batter.
  6. Bake for 40-45 minutes, or until the top is set and the edges are starting to pull away from the sides of the pan.
  7. Let cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream, if desired.
