- 2 pounds pork shoulder or pork belly
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 2 tablespoons brown sugar
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
For the ramen:
- 4-6 servings of ramen noodles
- 4 cups chicken or vegetable broth
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- Sliced green onions (for garnish)
- Sliced radishes (for garnish)
- Soft-boiled eggs (optional, for garnish)
Preparation:
- In a bowl, combine the soy sauce, mirin, brown sugar, sesame oil, minced garlic, grated ginger, smoked paprika, and black pepper. Mix well to create a marinade.
- Place the pork shoulder or pork belly in a large zip-top bag or a covered container. Pour the marinade over the pork, making sure it is evenly coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight.
- Preheat your smoker according to the manufacturer’s instructions. Smoke the marinated pork at a low temperature (around 225°F/107°C) for 4-6 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender and easily shredable.
