Ingredients:
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup long grain white rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1 1/2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro

Instructions:
- Preheat the oven to 350°F (175°C).
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
- Add the diced onion, red bell pepper, green bell pepper, minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper to the skillet. Stir well to combine.
- Add the rice, black beans, diced tomatoes (undrained), frozen corn, and chicken broth to the skillet. Stir well to combine.
