Heaven on Earth Cake

Ingredients:

For the cake:

  • 1 box of yellow cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup milk

For the filling:

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sugar
  • 1 cup heavy whipping cream
  • 1/2 cup shredded sweetened coconut

For the frosting:

  • 1 tub (8 oz) whipped topping, thawed
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded sweetened coconut

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan with cooking spray.
  2. In a large bowl, combine the yellow cake mix, vegetable oil, eggs, sour cream, and milk. Mix well until smooth.
  3. Pour the cake batter into the prepared baking pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool completely in the pan.
  5. To make the filling, in a medium bowl, combine the crushed pineapple, sugar, heavy whipping cream, and shredded coconut. Mix well.
  6. Spread the filling evenly over the cooled cake.
  7. To make the frosting, in a large bowl, whisk together the whipped topping, instant vanilla pudding mix, cold milk, and vanilla extract until smooth.
  8. Spread the frosting over the filling.
  9. Sprinkle the shredded coconut over the top of the frosting.
  10. Chill the cake in the refrigerator for at least 2 hours before serving.
