Easy Creme Brulee Cheesecake Bars

Ingredients:
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup butter, melted
24 oz cream cheese, softened
1 cup sugar
1 tsp vanilla extract
4 eggs
1/2 cup heavy cream
1/4 cup sugar (for brulee topping)

Instructions:
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
In a small bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking pan.
In a large mixing bowl, beat the cream cheese until smooth. Add in the 1 cup sugar and vanilla extract, and continue to beat until well combined.
Add in the eggs, one at a time, making sure each is fully incorporated before adding the next. Stir in the heavy cream.
Pour the cheesecake mixture over the graham cracker crust in the pan.
Bake for 40-45 minutes, or until the edges are set and the center is still slightly jiggly.
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 2 hours, or overnight.
Once chilled, remove the cheesecake from the pan and cut it into bars.
Sprinkle 1/4 cup sugar evenly over the top of the bars.
Using a kitchen torch, caramelize the sugar by moving the flame back and forth over the sugar until it melts and turns golden brown.
