What you need
½ cup brown sugar packed
1½ teaspoons cinnamon
⅔ cup sugar
½ cup salted butter, softened to room temp
2 large eggs
2 teaspoon vanilla extract
1½ cups all-purpose flour
1½ teaspoons baking powder
½ cup milk
1¼ cups peeled and diced apples (into 2-inch chunks)
How to prepare
Step 1: Preheat oven to 350 degrees, and then grease a large loaf pan with non-stick cooking spray
Step 2: Mix brown sugar and cinnamon together in a small bowl and set aside
Step 3: Use an electric mixer to mix together sugar and butter in a large bowl until the mix becomes smooth. Add eggs and vanilla extract to the mix and stir well, until fully combined. Then add flour, baking powder and milk and stir well until the entire batter is fully combined.
Step 4: Pour half of the batter into greased loaf pan. Cover batter with half the diced apples, and press the apples down slightly into the batter. Sprinkle the apples with half the cinnamon and sugar mixture
Step 5: Pour the remaining batter over the apple layer. Top with remaining diced apples, and push the apples gently into the batter. Then sprinkle the remaining cinnamon sugar mixture on top.
Step 6: Insert a toothpick into the dressed batter, then place in the preheated oven and bake for about 50-60 minutes, until the inserted toothpick comes out clean
Step 7: Take out of the oven, then allow to cool completely before removing from baking pan. Cut the bread into slices and serve for all to enjoy.
